Abstract
This paper investigates the changes of physicochemical characteristic of twelve assortments of brown rice such as fragrant rice, black rice and long grain rice etc, which have been stored with plastic bag wrapped and sealed for three months at the temperature of 30 ℃. The results showed that their physicochemical characteristic changed differently between the assortments of the rice.
